Today is National Wine Day, so naturally Disney is sharing some news with us with a first look at the interior of Wine Bar George it’s newest dining location in Disney Springs. It’s been a good 6 months since we’ve heard much news on Master Sommelier George Miliotes and his wine expertise coming to Disney Springs. So we’re excited to get a sneak peak at what he has in store for us until it opens in late 2017!
Wine Bar George is going to be a 6,000 square-foot space that reminds you of a renovated winery. It features wood ceilings, concrete floors, warm lighting and a welcoming atmosphere. It’s home to over 100 wine selections available either by the bottle or the glass.
“Guests will experience a feel reminiscent of the ‘Old World’ as if they are on the bottom floor of a gravity-flow winery surrounded by their best friends,” explains Miliotes. The space includes a center bar on the first floor, seating for groups of all sizes and chalkboards displaying menu details.
An interesting feature will be the option to order wine on tap at the bar, and share communal tables for cheese and wine pairings. There will be shareable plates with cheese and charcuterie that complement the wines, offering local, seasonal features. “We’ll change our offerings as ingredients come into their prime,” he explains. Any way you can imagine to experience and explore wine, you’ll find it at Wine Bar George.
George Miliotes has a history with Disney, and some will remember his involvement with the California Grill when he ran a beverage program there from 1995 to 2002. Now he’s back at Disney and he’s one of only 236 individuals in the world certified by the Court of Master Sommeliers, and has the only bar in Florida run by a Master Sommelier.
And if you aren’t quite up to the level of Master Sommelier yet, don’t worry, there will be some wonderful wine education courses available that will help to inform people on as much wine knowledge as they wish to have. It sounds like Wine Bar George is going to appeal to both expert wine lovers, as well as people who are just starting out.
“My hope is that Wine Bar George will cater to wine connoisseurs and novices alike,” says Miliotes. With a ranges of varietals, vintages and prices, Miliotes says he promises well-known wineries, but also sips from up-and-coming regions.

Besides Wine Bar George, Disney announced this week two more new dining locations coming to Disney Springs: Jaleo, a Spanish style restaurant run by world-known Chef José Andrés; and Wolfgang Puck Bar and Grill, which will be a modern take on the ‘bar and grill’ experience.
So many awesome places to try in the coming year, so get ready to start first by having an awesome wine experience when Wine Bar George opens up in late 2017!
