Disney announced a another brand new restaurant, Jaleo coming to Disney Springs’ West Side next year in 2018. This unique concept is being brought together by world renowned Chef José Andrés and his ThinkFoodGroup. It’s a Spanish restaurant which highlights the unique flavors of Spain and the rich regional diversity in regional and traditional Spanish Cuisine.
Jaleo will have a unique menu of Tapas, Paella cooked over a wood fire, hand-carved Jamon Iberico de Bellota which is like the best ham you’ve ever tasted, along with wood-grilled Iberico pork.
Jaleo already has 5 locations throughout the United States and Mexico City, and this will be the first location in Florida. The restaurant, which is being brought to life by famous Spanish designer Juli Capella, will be divided into levels which will have vibrant, theatrical decor representing the colorful culture that is Spain. The first level for example will have a “grab-n-go” storefront with Spanish-style sandwiches.
This was announced at the same time as the news of Wolfgang Puck Bar and Grill Disney Springs is opening in 2018 as well.
This sounds like a great addition to Disney Springs to me and is part of the next phase in redesigning the West Side. I’m always down for some Spanish food, I’ll just have to wait till 2018 to get it!

My name is Ziggy and I love Disney, everything Disney! I grew up on Disney and it has and continues to be a huge part of my life. I started young when my parents took me to Disney World when I was 18 months old. Little did they know that would be the first of an uncountable number of trips we would take. I have so many amazing memories going to Disney with my family and friends and it has been interwoven into my DNA.
